Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Step 2: Assemble the Dumplings
Unroll the crescent roll dough into 8 triangles. Place a peach quarter on the wide end of each triangle and roll up, sealing the peach inside. Arrange in the prepared baking dish.
Step 3: Make the Syrup
In a bowl, whisk together melted butter, sugar, cinnamon, and vanilla extract until smooth.
Step 4: Pour & Bake
Pour the syrup evenly over the dumplings. Pour the lemon-lime soda around the edges of the dish (not directly on the dough). Bake for 35-40 minutes, or until golden brown and bubbly.
Step 5: Serve
Cool for 5-10 minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream!
