Get Started
- Preheat oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
Prepare the Beef
- In a large skillet, brown the ground beef over medium heat, breaking it up with a spatula (5-6 minutes). Drain excess fat.
- Add taco seasoning and water. Stir and simmer 2-3 minutes.
- Stir in black beans and corn. Cook 2-3 minutes more, until heated through.
Assemble the Lasagna
- Spread a thin layer of enchilada sauce in the baking dish.
- Layer two tortillas on top, overlapping if needed.
- Spread one-third of the beef mixture over the tortillas.
- Top with a few tablespoons of enchilada sauce and salsa, then sprinkle with cheese.
- Repeat layers (tortillas, beef, sauce, salsa, cheese) two more times, ending with cheese.
Bake & Serve
- Cover with foil and bake for 20 minutes.
- Remove foil and bake 10-15 minutes more, until cheese is melted and bubbly.
- Cool 10 minutes before serving.
- Garnish with green onions, cilantro, tomatoes, and sour cream. Slice and serve warm!

- Tortillas: Flour or corn – corn is more authentic, flour is softer.
- Cheese: Mexican blend is best, but cheddar, Monterey Jack, etc., work too.
- Spice: Adjust heat with mild, medium, or hot salsa and enchilada sauce.
