Instructions

Get Started

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.

Prepare the Beef

  1. In a large skillet, brown the ground beef over medium heat, breaking it up with a spatula (5-6 minutes). Drain excess fat.
  2. Add taco seasoning and water. Stir and simmer 2-3 minutes.
  3. Stir in black beans and corn. Cook 2-3 minutes more, until heated through.

Assemble the Lasagna

  1. Spread a thin layer of enchilada sauce in the baking dish.
  2. Layer two tortillas on top, overlapping if needed.
  3. Spread one-third of the beef mixture over the tortillas.
  4. Top with a few tablespoons of enchilada sauce and salsa, then sprinkle with cheese.
  5. Repeat layers (tortillas, beef, sauce, salsa, cheese) two more times, ending with cheese.

Bake & Serve

  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake 10-15 minutes more, until cheese is melted and bubbly.
  3. Cool 10 minutes before serving.
  4. Garnish with green onions, cilantro, tomatoes, and sour cream. Slice and serve warm!

Tips & Notes

  • Tortillas: Flour or corn – corn is more authentic, flour is softer.
  • Cheese: Mexican blend is best, but cheddar, Monterey Jack, etc., work too.
  • Spice: Adjust heat with mild, medium, or hot salsa and enchilada sauce.

Variations

  • Chicken: Substitute cooked shredded chicken for the beef.
  • Vegetarian: Omit beef, double beans and corn. Add sautéed peppers and onions.
  • Spicy: Add jalapeños or hot sauce to the beef.
  • Breakfast: Use scrambled eggs, breakfast sausage, and cheese.
