Instructions
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Step 2: Cook the Beef
Brown the ground beef and onion in a large skillet over medium heat (5-7 minutes). Drain excess fat. Add garlic and cook 1-2 minutes. Stir in taco seasoning, beans, corn, diced tomatoes, and salsa. Simmer for 5 minutes.
Step 3: Assemble the Lasagna
Layer 2 tortillas in the dish, overlapping if needed. Top with a layer of beef mixture and 1 cup of cheese. Repeat layers twice more, ending with tortillas and the remaining cheese.
Step 4: Bake
Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes, or until cheese is melted and bubbly.
Step 5: Serve
Cool 10 minutes before slicing. Garnish with cilantro (optional). Serve warm!
