Instructions
Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Step 2: Make the Meatloaf
In a large bowl, gently combine ground beef, breadcrumbs, Parmesan, onion, garlic, egg, ketchup, Worcestershire sauce, salt, and pepper. Don’t overmix! Transfer to the prepared pan, pressing evenly. Top with an extra 2 tablespoons of ketchup.
Step 3: Bake the Meatloaf
Bake for 50-55 minutes, or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes.
Step 4: Make the Mashed Potatoes
While the meatloaf bakes, boil cubed potatoes in water until fork-tender (15-20 minutes). Drain well. Return to the pot and mash with milk, butter, sour cream, salt, and pepper until smooth and creamy.
Step 5: Assemble & Finish
Spread mashed potatoes over the meatloaf. Sprinkle with cheddar cheese. Bake for another 10-15 minutes, or until cheese is melted and bubbly.
Step 6: Serve!
Let cool slightly before slicing. Garnish with parsley (optional). Serve warm and enjoy!

- For the best results, use 80/20 ground beef.
- Experiment with different cheeses – cheddar and mozzarella is a great combo!
- Make sure to drain potatoes well to avoid watery mashed potatoes.
