Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
Step 2: Make the Meatloaf
In a large bowl, gently combine ground beef, breadcrumbs, onion, garlic, egg, milk, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning. Don’t overmix! Transfer to the prepared pan, pressing evenly. Top with 2 tablespoons extra ketchup.
Step 3: Bake the Meatloaf
Bake for 50-55 minutes, or until the internal temperature reaches 160°F (71°C). Let rest 10 minutes.
Step 4: Make the Mashed Potatoes
While the meatloaf bakes, boil potatoes in water until tender (15-20 minutes). Drain and return to the pot. Add milk, butter, sour cream, salt, and pepper. Mash until smooth and creamy.
Step 5: Assemble & Finish
Spread mashed potatoes over the meatloaf. Sprinkle with cheddar cheese. Bake for another 10-15 minutes, or until cheese is melted and bubbly.
Step 6: Serve!
Cool 5 minutes before slicing. Garnish with parsley (optional). Serve warm and enjoy!
