Instructions
Step 1: Prepare the Chicken
- Cut the whole chicken in half lengthwise.
- Make two shallow cuts in each half.
- Insert two ice cubes into each cut (this keeps the chicken juicy!).
- Place chicken in a large pot. Add garlic, leek, parsley, peppercorns, salt, and Italian seasoning.
- Add enough water to cover the chicken.
- Cover and cook over medium heat for 20 minutes.
- Remove chicken and set aside.
Step 2: Make the Garlic Butter
- In a bowl, combine melted butter, parsley, salt, pepper, paprika, and garlic powder.
- Stir well.
Step 3: Prepare the Vegetables
- Combine potatoes, onion, and bell pepper in a bowl.
- Season with salt, pepper, and Italian seasoning.
- Drizzle with olive oil and toss to coat.
Step 4: Assemble and Bake
- Preheat oven to 180°C (350°F).
- Line a baking dish with parchment paper.
- Place chicken in the dish and pour garlic butter over it.
- Arrange vegetables around the chicken.
- Bake for 45 minutes, or until chicken is golden and potatoes are tender (cooking time may vary).
Step 5: Serve and Enjoy!
