Crockpot Chicken and Gravy Tender Chicken

Instructions:

  1. Season chicken breasts with salt, pepper, and thyme. Place in your crockpot.
  2. Melt butter in a skillet over medium heat. Add onion and garlic; cook until onion is translucent.
  3. Sprinkle flour over onion mixture, stirring well. Cook 1 minute to remove raw flour taste.
  4. Slowly pour in chicken broth, stirring constantly. Cook until thickened and simmering.
  5. Pour gravy mixture over chicken in the crockpot.
  6. Cook on low for 6-8 hours, or high for 3-4 hours, until chicken is tender.
  7. Remove chicken; set aside.
  8. Heat heavy cream in a small saucepan.
  9. Whisk warmed cream into the crockpot gravy.
  10. Return chicken to crockpot; stir gently to coat.
  11. Serve hot with your favorite sides (mashed potatoes are amazing!).

Keto/Low Carb Adaptation:

For a keto or low-carb version, substitute almond or coconut flour for all-purpose flour. Use xanthan gum as a thickener. Serve over cauliflower rice or zucchini noodles.

Tips for Success:

  • Add a teaspoon of rosemary or sage for extra flavor.
  • For thicker gravy, mix 1 tablespoon flour with 1 tablespoon cold water and stir into the gravy during the last hour of cooking.
  • Don’t skip browning the onions and garlic – it adds amazing depth of flavor!

Enjoy!

This Crockpot Chicken and Gravy is the ultimate comfort food. It’s simple, delicious, and sure to become a new family favorite. Happy cooking!
