Instructions:
Step 1: Mix the Dough
In a large bowl, whisk together flour and salt. In a separate small bowl, dissolve yeast in warm water (not too hot!). Let it sit for 5 minutes until frothy. Pour the yeast mixture into the flour mixture and stir until a shaggy dough forms. It’ll be sticky – that’s okay! Cover and let rest for 12-18 hours.
Step 2: Shape the Bread
After the long rise, gently flour a surface and transfer the dough. Fold it a few times into a ball (it doesn’t need to be perfect!). Place the dough on parchment paper, cover, and let rise another 1-2 hours.
Step 3: Preheat the Crockpot
Line your crockpot with parchment paper. Turn it to high and preheat for 30 minutes with the lid on.
Step 4: Bake the Bread
Carefully transfer the dough (and parchment paper) to the preheated crockpot. Cover and bake on high for 2-3 hours. Check after 2 hours; it’s done when golden brown and sounds hollow when tapped.
Step 5: Cool and Enjoy!
Remove the bread carefully (use oven mitts!). Let it cool completely on a wire rack before slicing. Enjoy your crispy-crusted, fluffy bread!
Keto/Low-Carb Variation:
Substitute all-purpose flour with almond flour or a blend of almond and coconut flour (using the same measurements). Texture and taste might differ slightly, but it will still be delicious!

- Use warm (not hot!) water for the yeast.
- Let the dough rise for the full recommended time.
- Experiment with different flours (whole wheat, rye, etc.).
- Rotate the crockpot halfway through baking for even browning (if needed).
