Creamy White Chicken Lasagna

Instructions

1. Cook the Lasagna Noodles

Boil lasagna noodles according to package directions until al dente. Drain and lay flat to prevent sticking.

2. Make the White Sauce

Melt butter in a saucepan over medium heat. Add garlic and sauté for 1-2 minutes. Whisk in flour for 1-2 minutes. Gradually whisk in milk and chicken broth until smooth. Simmer, stirring constantly, until thickened (4-5 minutes). Season with salt, pepper, and nutmeg (if using).

3. Sauté Spinach and Chicken

In a skillet, sauté spinach in olive oil until wilted (2-3 minutes). Season with salt, pepper, and Italian seasoning. Add chicken and combine.

4. Prepare the Ricotta Mixture

Combine ricotta, egg, mozzarella, Parmesan, and basil in a bowl.

5. Assemble the Lasagna

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  1. Spread a thin layer of white sauce in the dish.
  2. Layer with 3 noodles.
  3. Spread 1/3 of the ricotta mixture.
  4. Add half the chicken and spinach.
  5. Pour 1/3 of the white sauce.
  6. Repeat layers: noodles, ricotta, chicken/spinach, white sauce. End with noodles and white sauce.

6. Add the Topping

Sprinkle with remaining mozzarella and Parmesan.

7. Bake the Lasagna

Cover with foil and bake for 25 minutes. Remove foil and bake for another 20-25 minutes, or until bubbly and golden.

8. Cool and Serve

Let rest 10-15 minutes before slicing. Garnish with parsley (optional) and serve warm.
