Instructions
1. Preheat & Prep:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Cook the Beef:
Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook 4-5 minutes until tender. Add garlic and cook 1 minute more. Add ground beef; cook until browned, breaking it up. Season with salt, pepper, paprika, and Italian seasoning. Drain excess grease.
3. Combine Ingredients:
In a large bowl, combine uncooked rice, soup, and broth. Stir in cooked beef mixture, peas and carrots, and 1 cup cheddar cheese. Mix well.
4. Assemble & Bake:
Pour mixture into prepared dish. Cover with foil. Bake for 45-50 minutes, or until rice is tender and bubbly.
5. Add Cheese & Finish:
Remove foil. Sprinkle remaining cheddar and mozzarella (if using) on top. Bake uncovered for 10-15 minutes, or until cheese is melted and bubbly.
6. Serve:
Let cool 5 minutes. Garnish with parsley (optional). Serve warm!
