Step 1: Heat the Half-and-Half
In a medium saucepan over medium heat, warm the half-and-half until it steams (don’t boil).
Step 2: Add the Cheese
Reduce heat to low. Gradually add the cubed white American cheese, a handful at a time, stirring constantly until melted and smooth. This prevents lumps!
Step 3: Stir in the Chilies and Spices
Once the cheese is melted, stir in the diced green chilies, garlic powder, onion powder, cumin, salt, pepper, and chili powder (if using). Mix well.
Step 4: Adjust Consistency
If it’s too thick, add 1-2 tablespoons more half-and-half.
Step 5: Serve Warm
Transfer to a serving bowl and enjoy immediately with tortilla chips, veggies, or as a topping!
