Step 1: Prep the Potatoes
Peel and grate the potatoes. Squeeze out excess water using a clean towel; this is key for a crispy pancake!
Step 2: Combine Ingredients
In a bowl, combine the grated potatoes, eggs, and salt. Mix well with a fork until everything is evenly distributed.
Step 3: Cook the Pancake
Heat a little oil (vegetable, olive, etc.) in a pan over medium heat. Pour the potato mixture into the pan and spread evenly. Press gently with a spatula. Cook for 5-7 minutes per side, or until golden brown and crispy. To flip, carefully place a plate over the pan, invert, and slide back into the pan.
Step 4: Serve and Enjoy!
Remove from the pan and let cool slightly. Slice into wedges or squares and serve warm. A dollop of sour cream is a delicious addition!

For a keto or low-carb version, substitute the potatoes with grated cauliflower or zucchini. Follow the same cooking instructions.
