Golden Yellow Chicken Curry Recipe
Ingredients:
- 4 chicken thighs (bone-in or boneless)
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tsp turmeric powder
- 1 tsp cumin
- 1 tsp coriander powder
- 1/2 tsp chili powder (optional)
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 medium potato, cubed (optional)
- Salt to taste
- Fresh cilantro for garnish
Instructions:
Heat oil in a large pan. Add onion, garlic, and ginger, and sauté until golden.
Mix in turmeric, cumin, coriander, and chili powder. Stir for 1 minute to release aromas.
Add chicken thighs and sear until lightly browned on all sides.
Pour in chicken broth and coconut milk. Stir to combine.
If using, add cubed potatoes. Simmer for 20-25 minutes until chicken is cooked through and the sauce thickens.
Season with salt and garnish with fresh cilantro. Serve with naan, rice, or roti for a delightful meal!
